Spicy Vegetarian Stuffed Peppers
Make a double batch and freeze what you don’t serve for a quick dinner another night. Loaded with flavor, these are a complete meal in and of themselves!
Serves 4
Ingredients
4 large garlic cloves, minced
1 large onion, minced
¹⁄4 cup olive oil
1 tablespoon Asian sesame oil
1 pound veggie burgers
Salt and pepper to taste
4 large green or red bell peppers
1.Sauté the garlic and onion in the olive and sesame oil until soft. Add the veggie burgers, breaking up with a wooden spoon. Add salt and pepper.
2.Preheat oven to 350°F.
3.Cut the peppers in half lengthwise and scoop out seeds and cores. Fill with the burger mixture. Place on a baking sheet that you have prepared with
nonstick spray.
4.Bake for 25 minutes. Serve hot.
