Espresso Custard

Ingredients
3 tablespoons instant espresso powder
2 tablespoons boiling water
2 cups whipping cream
3 whole eggs
4 teaspoons cornstarch
4 teaspoons cold water
¹⁄2 cup sugar, or to taste
1 teaspoon vanilla
1.Preheat oven to 325°F. Whisk together the espresso powder and boiling water, add the cream, and beat in the eggs. Whisk the cornstarch and water to-
gether until smooth and beat into the mixture.
2.Add the rest of the ingredients and stir well. Place 4 buttered 6-ounce custard cups in a roasting pan of hot water in the middle of the oven. Add the
custard.
3.Bake for 50 to 60 minutes. Serve warm, room temperature, or chilled with whipped cream.
